Black Bean Broccoli Burgers

Whoa Time Flies when your Mashing Beans!

I have been Slacking on the Blog but im back..

Time is something we all have limited amounts of, so heres a quick and easy recipe to make some tasty Black Bean and Broccoli burgers! They are great for left overs. You can leave the mix covered and in your fridge for a few days and cook when ready or pre cook and heat when ready to eat.

To make it a complete meal we cooked up some tater wedges and homemade vegan ranch dressing to go on a small garden salad. I hope you enjoy it and tag me thru social media in photos of your burgers when you make them!

(MAKE SURE TO ALWAYS THOROUGHLY WASH ALL FRUITS AND VEGGIES) We used Flax Eggs for our recipe but you can use a chicken egg if you prefer. Black Bean Broccoli Burger Ingredients: 1 can Black Beans 2/3 Cup cooked Broccoli Florets Half of a Onion 1 Garlic clove 2 Eggs (Flax Eggs) 2/3-3/4 cup of Breadcrumbs Salt to taste

Flax Egg Recipe: 1 TBSP ground flax seed + 3 TBSP of warm water set aside to marinate for 5 minutes.

So to start you will want to prepare your flax eggs. This recipe calls for 2 eggs. First thing you want to do is grab your Broccoli ,the recipe calls for 2/3 cup of Florets (no stems).

Get them into a pot of boiling water for about 5 mins.

Now you can grab your can of Black Beans, you will need to drain and rinse them in water. Then you will separate half of them into a bowl and use a fork to mash them. Once your Beans are mashed you can add the rest of the beans to the bowl.

By this time your Broccoli should be done so strain them and chop them up and add to your mix. Next you will want to grab your Onion and your Garlic and chop them up real nice and add them to your mix. Next you can add you Eggs. Now you just add your bread crumbs and stir it up!

Bam Black Bean and Broccoli Mix is DOne! Now you just heat up some Olive Oil in a pan on Med-High Heat and cook 3-5 Minutes on each side. You can add whatever seasonings to this mix to give it more flavor, but as is its a pretty neutral flavored burger so it goes well with any and all of your favorite burger toppings. Our Avocado was not ripe at the time of filming

Tater Wedges

Ingredients:

Potatoes

Salt

Cajun Seasonings

PreHeat the oven to 420 degrees. Then chop up some Potatoes in to wedges.

Now you can pour some Olive Oil into a bowl, add seasonings like Salt and Cajun seasonings in our case. Then mix and cover your Taters in the oils. Once your Taters are covered in oil you can spread them out on a baking sheet and toss them in the oven for 20-25 Minutes.

Vegan Ranch Dressing Ingredients: Hemp Milk Vegan Mayo Parsley Garlic powder Onion powder Salt Pepper The recipe is simple and can be made small or large batches... Just start with equal parts Hemp Milk and Vegan Mayo and then add the seasonings to taste. Better to start slow with adding seasonings and find what you like. You can always add more.
