Meat vs. Potatoes : Sausage and Pepper Pasta

slacking on the social media i guess.
today i am sharing a video i am calling "meat vs potatoes"
its basically meat based dinners vs plant based dinners.
the goal is to share and compare the healthy and sustainable options out there ..
some people point the increased cancer rates on the meat and dairy industry..
there are strong links to these claims.
so its only natural to find out what other options we have.
follow me on my journey of terrible blogging and sloppy film making.
For the first one we did something easy.
Sausage and Pepper Pasta
Servings: 2-3
Ingredients
2-3 Italian Sausages (meat or vegan)
1 Tbsp Avocado Oil
2-3 Bell Peppers (green, red, or yellow)
1 Onion
2 cloves of Garlic
1 box of Pomi diced tomatoes
1/2- 1 Tbsp Italian Seasoning
1/4 Tsp Cayenne Pepper (optional)
Salt and Pepper to Taste
Your favorite Pasta
Instructions
Start by adding your Avocado oil to you medium pan, heat the oil on med-high. Toss your sausage on and cook and brown evenly then remove from heat and set aside.
Boil your water for the pasta, cook according to the box
thinly slice up your peppers, onion, and garlic. at this time you can also slice your sausage in half inch chunks.
toss your veggies on the pan with little oil and cook then until they have softened to your liking then add the sausages and poi to the pan.
Season to your liking and simmer for a few minutes.
when your pasta is done drain it and toss it on your plate. top the pasta with your sausage and peppers and enjoy.
